According to decorated Detroit pastry chef Ben Robison, the pastry chef at Echelon in Ann Arbor, there’s a science involved in making a classic dessert. “When we talk about something like creme brulee, it’s just a basic custard with a torched sugar top, so there’s not a lot to it,” says Robison, who previously worked at Freya and Le Suprême. “But being able to dial in that custard to the perfect consistency where it sets, but it’s not too set — it has this nice, beautiful, creamy, velvety texture. Dialing in cooking time, so that it’s not too cooked — it doesn’t get curdled, it doesn’t get eggy. There’s a very fine line in a lot of those things that even though it is simple, it’s also very simple to mess it up.”
